Description

Rich, fudgy, and packed with bold coffee and chocolate flavor, these no-bake Mocha Energy Bites are naturally sweetened, gluten-free, dairy-free, and plant-based. Made with almonds, dates, cacao, and coffee, they’re perfect for a quick, nourishing snack or a post-workout treat.


Ingredients

1 cup raw almonds

1 cup Medjool dates, pitted

2 tablespoons cacao powder

1 tablespoon ground coffee (or instant espresso)

1 tablespoon almond butter

1 tablespoon coconut oil, melted

1/4 teaspoon sea salt

Optional: mini chocolate chips for topping


Instructions

  1. Pulse the raw almonds in a food processor until finely ground.
  2. Add the dates, cacao powder, ground coffee, almond butter, melted coconut oil, and sea salt.
  3. Blend the mixture until well combined and sticky, scraping down the sides as needed.
  4. Use a tablespoon to scoop out portions and roll them into balls.
  5. Press a few mini chocolate chips on top of each ball if desired.
  6. Place the bites on a parchment-lined tray and refrigerate for at least 20 minutes until firm.

Notes

Swap almonds with cashews or walnuts for a different flavor profile.

Mix mini chocolate chips directly into the dough for extra richness.

For a caffeine-free version, omit the coffee or use a substitute like roasted chicory.

Adding a pinch of cinnamon or a splash of vanilla extract gives a warm twist.

Store in an airtight container in the fridge for up to 2 weeks or freeze for longer storage.
