Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
3 ripe bananas, mashed
3/4 cup granulated sugar
1/2 cup brown sugar
1/2 cup unsalted butter, melted
2 large eggs
1/4 cup milk
1 teaspoon vanilla extract
1 cup chopped walnuts or pecans
Instructions
- Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease it.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- In a separate bowl, mash the bananas until smooth. Stir in the granulated sugar, brown sugar, melted butter, eggs, milk, and vanilla extract until well combined.
- Gently fold the wet ingredients into the dry ingredients until just combined, being careful not to overmix.
- Fold in the chopped nuts until evenly distributed.
- Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Use very ripe bananas with brown spots for the best flavor and moisture.
Swap walnuts for pecans or omit nuts for a nut-free version.
Substitute melted butter with an equal amount of vegetable oil for extra moisture.
For added texture, mix in chocolate chips or shredded coconut.
