Ingredients

1 ½ cups warm water (110°F/45°C)

1 packet active dry yeast (2 ¼ teaspoons)

1 tablespoon sugar

4 cups all-purpose flour

1 teaspoon salt

2 tablespoons unsalted butter, melted

2 cups shredded mozzarella cheese

½ cup grated Parmesan cheese

2 tablespoons fresh rosemary, finely chopped

10 cups water

2/3 cup baking soda

1 egg, beaten

Coarse sea salt, for sprinkling


Instructions

  1. In a large mixing bowl, combine warm water, yeast, and sugar. Let it sit for about 5 minutes until frothy.
  2. Add flour, salt, and melted butter to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.
  5. Preheat the oven to 450°F (230°C) and line two baking sheets with parchment paper.
  6. Punch down the dough and divide it into 12 equal pieces.
  7. Flatten each piece into a 4-inch circle. Place a tablespoon of mozzarella and a sprinkle of Parmesan in the center of half of the circles. Top with the remaining dough circles and pinch the edges tightly to seal.
  8. In a large pot, bring 10 cups of water and baking soda to a boil.
  9. Carefully dip each pretzel into the boiling water for about 30 seconds, then remove and place on the prepared baking sheets.
  10. Brush each pretzel with the beaten egg and sprinkle with coarse sea salt and chopped rosemary.
  11. Bake for 12-15 minutes, or until golden brown.
  12. Remove from the oven and let cool slightly before serving.

Notes

For added flavor, consider experimenting with different cheeses for the filling or toppings.

You can make the dough ahead of time and refrigerate it for up to 24 hours.
