Creamy, savory, and refined, this Mushroom Gruyère Pasta blends earthy mushrooms and nutty Gruyère cheese in a velvety sauce — a quick yet elegant comfort meal perfect for any occasion.
Ingredients
12 oz fettuccine or linguine
2 tablespoons olive oil
2 tablespoons butter
1 small shallot, finely chopped
3 cloves garlic, minced
10 oz cremini or baby bella mushrooms, sliced
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/4 cup dry white wine (or vegetable broth)
1/2 cup heavy cream
1/2 cup grated Gruyère cheese
1/4 cup grated Parmesan cheese (optional)
2 tablespoons chopped fresh parsley
Instructions
- Bring a large pot of salted water to a boil and cook the pasta until al dente according to package instructions. Reserve 1/2 cup of pasta water, then drain the pasta.
- In a large skillet, heat olive oil and butter over medium heat.
- Add the chopped shallot and cook for about 2 minutes until fragrant. Stir in the garlic and cook for another 30 seconds.
- Add the sliced mushrooms, season with salt and pepper, and cook for 8–10 minutes, stirring occasionally, until deeply golden and reduced in size.
- Pour in the white wine (or broth) to deglaze the pan, and simmer for about 2 minutes until mostly evaporated.
- Reduce the heat and stir in the heavy cream. Let it simmer for 2–3 minutes until slightly thickened.
- Stir in the Gruyère and Parmesan cheese until melted and smooth.
- Add the cooked pasta to the sauce, using reserved pasta water to loosen if necessary.
- Sprinkle with chopped parsley and serve hot.
