Ingredients

1 pound ground beef

1 pound ground chicken or turkey

1 cup breadcrumbs

½ cup milk

½ cup grated Parmesan cheese

½ cup finely chopped onions

1 cup finely chopped mushrooms

4 slices beef bacon, cooked and crumbled

1 cup shredded Swiss cheese

2 large eggs

1 tablespoon Worcestershire sauce

1 tablespoon ketchup

1 teaspoon garlic powder

1 teaspoon dried thyme

½ teaspoon salt

½ teaspoon black pepper

½ cup ketchup (for topping)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the beef bacon until crispy, then crumble it.
  3. In the same skillet, sauté the onions and mushrooms until the mushrooms are tender and the onions are translucent. Set aside to cool.
  4. In a large bowl, combine ground beef, ground chicken or turkey, breadcrumbs, milk, Parmesan cheese, cooked bacon, Swiss cheese, sautéed onions, and mushrooms.
  5. Add eggs, Worcestershire sauce, 1 tablespoon ketchup, garlic powder, thyme, salt, and pepper. Mix until just combined.
  6. Shape the mixture into a loaf and place it in a baking dish or lined baking sheet. Spread remaining ketchup over the top.
  7. Bake for 60-70 minutes, until the internal temperature reaches 160°F (71°C).
  8. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

Substitute Swiss cheese with cheddar or mozzarella if preferred.

For added texture, consider mixing in finely chopped bell peppers or spinach.
