Description
No-Bake Brownie Bites are a rich and fudgy chocolate treat made with dates, nuts, and cocoa powder. Naturally sweetened and quick to prepare, they’re the perfect healthy snack or dessert.
Ingredients
1 cup pitted Medjool dates
1 cup raw walnuts (or almonds)
1/4 cup unsweetened cocoa powder
1 teaspoon vanilla extract
Pinch of salt
2 tablespoons mini chocolate chips (optional)
Instructions
- In a food processor, pulse walnuts until finely ground, avoiding over-processing into a paste.
- Add dates, cocoa powder, vanilla extract, and salt to the food processor. Blend until the mixture is sticky and forms a dough-like consistency.
- If desired, fold in mini chocolate chips by hand.
- Scoop about 1 tablespoon of the mixture and roll into balls. Repeat with remaining mixture.
- Place the bites on a parchment-lined tray and refrigerate for 30 minutes to firm up.
- Store in an airtight container in the fridge for up to 1 week or in the freezer for up to 1 month.
Notes
If the mixture doesn’t stick together, add a small splash of water or an extra date.
Variations include swapping nuts, adding flavors, or coating the bites with coconut or cocoa powder.
