Ingredients
Base:
2 cups old-fashioned rolled oats
1 cup smooth peanut butter (or almond butter)
1/2 cup honey or maple syrup
1/4 cup unsweetened cocoa powder
1 teaspoon vanilla extract
1/4 teaspoon salt
Chocolate Topping:
1/2 cup semisweet or milk chocolate chips
2 tablespoons unsalted butter
1 tablespoon peanut butter (optional)
Instructions
- Prepare the Base:
- Combine peanut butter, honey, cocoa powder, and salt in a medium saucepan. Heat over medium-low, stirring until smooth.
- Remove from heat, add vanilla extract, and mix in rolled oats until fully coated.
- Press into a Pan:
- Line an 8×8-inch dish with parchment paper or grease it lightly.
- Pack the oat mixture firmly and evenly into the pan.
- Make the Chocolate Topping:
- Melt chocolate chips, butter, and optional peanut butter in a small saucepan over low heat. Stir until smooth.
- Spread evenly over the oat base.
- Chill and Set:
- Refrigerate for 1–2 hours until firm.
- Cut and Serve:
- Slice into squares or rectangles, and enjoy!
Notes
Add nuts or dried fruit to the base for extra flavor and texture.
Use dark chocolate for a richer, less sweet topping.
