Ingredients
Crust: 2 cups crushed graham crackers, 1/2 cup unsalted butter (melted)
Cookie Dough: 1/2 cup unsalted butter (softened), 1/4 cup granulated sugar, 1/2 cup brown sugar, 1 tsp vanilla extract, 1 cup all-purpose flour (heat-treated), 1/4 tsp salt, 1/2 cup mini chocolate chips
Cheesecake: 2 cups cream cheese (softened), 1/2 cup granulated sugar, 1 tsp vanilla extract, 1 cup heavy cream (whipped)
Instructions
- Prepare the crust by mixing crushed graham crackers with melted butter and pressing into the bottom of a 9-inch springform pan. Chill in the refrigerator.
- For the cookie dough, cream together butter, sugars, and vanilla. Mix in flour and salt, then fold in chocolate chips.
- Beat cream cheese, sugar, and vanilla for the cheesecake mixture. Gently fold in whipped cream.
- Assemble by spreading half of the cheesecake over the crust, adding spoonfuls of cookie dough, and topping with the remaining cheesecake mixture.
- Chill in the refrigerator for at least 4 hours.

Cheesecake can be made a day ahead and stored in the refrigerator.
