Description
A simple no-bake dessert featuring layers of crunchy biscuits, silky custard, and a sweet icing topping, perfect for a fuss-free treat on warm days.
Ingredients
2 packs plain graham crackers or digestive biscuits (or vanilla wafers)
4 cups milk
1/2 cup sugar
1/3 cup cornstarch
2 tsp vanilla extract
3 egg yolks
2 tbsp butter
1 cup powdered sugar
1–2 tbsp milk
1/2 tsp vanilla
Instructions
- Line an 8×8 or 9×9 square pan with parchment paper.
- Arrange a layer of biscuits to cover the bottom of the pan.
- In a saucepan, whisk together the milk, sugar, and cornstarch until smooth.
- Heat over medium, stirring constantly. When hot, slowly whisk in the egg yolks.
- Continue stirring until the custard thickens, about 5 to 7 minutes.
- Remove from heat, then stir in the butter and vanilla extract until fully combined.
- Pour half of the custard over the biscuit layer.
- Add another biscuit layer on top of the custard.
- Pour the remaining custard over the second biscuit layer.
- Finish with a final layer of biscuits.
- Mix the powdered sugar, milk, and vanilla for the icing until smooth.
- Spread the icing evenly over the top biscuit layer.
- Chill the slice in the fridge for at least 4 hours; overnight chilling works best.
- Slice into squares and serve chilled.
Notes
For a richer flavor, try chocolate-flavored biscuits.
Instead of icing, dust with powdered sugar or drizzle melted chocolate.
Sprinkle toasted coconut on top for added crunch.
Add lemon or orange zest to custard for a citrus twist.
Substitute vanilla extract with almond extract for a unique aroma.
Store in an airtight container in the fridge for up to 3 days.
Best served chilled; reheating is not recommended.
