Ingredients
1 cup rolled oats
1/2 cup nut butter (peanut butter, almond butter, etc.)
1/3 cup honey or maple syrup
1/2 cup mini chocolate chips
1/2 cup ground flaxseed
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
- In a large bowl, combine the rolled oats, nut butter, honey, mini chocolate chips, ground flaxseed, vanilla extract, and salt. Mix well until all ingredients are evenly combined.
- Refrigerate the mixture for about 30 minutes to make it easier to handle.
- Once chilled, roll the mixture into 1-inch balls using your hands. If the mixture is too sticky, lightly wet your hands to make rolling easier.
- Place the energy bites on a baking sheet lined with parchment paper and refrigerate until firm. Transfer to an airtight container and store in the refrigerator for up to a week.

Notes
For a vegan option, substitute honey with maple syrup or agave nectar.
