Ingredients
1/2 cup peanut butter (or almond butter)
1/2 cup canned pumpkin puree
1/4 cup cocoa powder
1/4 cup pure maple syrup or honey
1/2 teaspoon pumpkin pie spice
1/4 teaspoon salt
1 teaspoon vanilla extract
1/3 cup quick oats or oat flour
Optional: 1/4 cup mini chocolate chips
Instructions
- In a medium bowl, mix the peanut butter, pumpkin puree, maple syrup, vanilla extract, salt, and pumpkin pie spice until smooth.
- Stir in the cocoa powder and oats (or oat flour) until a thick batter forms.
- If using, fold in the mini chocolate chips.
- Line a small loaf pan or container with parchment paper and press the brownie mixture firmly into it.
- Refrigerate for at least 1 hour until the brownies are set.
- Slice into squares and serve chilled or at room temperature.
Notes
Use almond or cashew butter for a different nutty flavor.
Sunflower seed butter makes a great nut-free alternative.
