Ingredients
3/4 cup peanut butter
1/4 cup unsalted butter, cut into pieces
2 cups chocolate chips (milk or semi-sweet)
1 1/2 cups Rice Krispies
3 cups mini marshmallows
Instructions
- Prepare the Pan: Line an 8×8 or 9×9 inch square pan with parchment paper or aluminum foil, and lightly spray with non-stick cooking spray.
- Melt Ingredients: In a large microwave-safe bowl, combine peanut butter, butter, and chocolate chips. Microwave on medium power in 45-second intervals, stirring in between, until melted and smooth.
- Cool Slightly: Stir the mixture until fully combined and let it cool slightly for about 5 minutes.
- Combine: Gently fold in Rice Krispies and mini marshmallows until evenly coated with the chocolate mixture.
- Set the Squares: Pour the mixture into the prepared pan and spread evenly. Refrigerate for at least 3 hours or until set.
- Serve: Lift the bars out using the parchment or foil overhang, cut into squares, and serve.
Notes
Consistency: For best results, ensure the mixture is cooled slightly before adding Rice Krispies and marshmallows to prevent them from melting.
Variations: Substitute peanut butter with almond butter or cashew butter for a different flavor. You can also use dark chocolate chips for a less sweet version.
