Ingredients
1 prepared 9-inch chocolate cookie pie crust
1 (3.4 oz) package instant vanilla pudding mix
1 cup cold milk
1 teaspoon mint extract
8 oz cream cheese, softened
1/2 cup granulated sugar
1 (8 oz) container whipped topping, thawed
6–8 drops green food coloring
Whipped cream, for garnish
Fresh strawberries, sliced, for garnish
Chocolate shavings or sprinkles (optional)
Instructions
- In a medium bowl, whisk together the instant vanilla pudding mix and cold milk until smooth and slightly thickened. Let sit for about 5 minutes to firm up.
- In a large mixing bowl, beat the softened cream cheese and granulated sugar until light and creamy.
- Add the prepared pudding, mint extract, and green food coloring to the cream cheese mixture. Beat until fully combined and evenly tinted.
- Gently fold in the whipped topping until the filling is smooth, fluffy, and uniform in color.
- Spoon the mint filling into the prepared chocolate cookie crust and smooth the top with a spatula.
- Refrigerate for at least 4 hours, or until fully set and chilled.
- Before serving, garnish with whipped cream, sliced strawberries, and chocolate shavings or sprinkles if desired. Slice and serve cold.

Store covered in the refrigerator for up to 3 days.
Freeze tightly wrapped for up to 1 month; thaw in the refrigerator before serving.
For a stronger mint flavor, add extract one drop at a time to avoid overpowering the pie.
