Description

A cool, creamy no-bake pie with a fluffy mint filling and rich chocolate cookie crust, inspired by the classic shamrock shake. Perfect for spring gatherings or anytime you want a refreshing minty dessert without turning on the oven.


Ingredients

1 prepared 9-inch chocolate cookie pie crust

1 (3.4 oz) package instant vanilla pudding mix

1 cup cold milk

1 teaspoon mint extract

8 oz cream cheese, softened

1/2 cup granulated sugar

1 (8 oz) container whipped topping, thawed

68 drops green food coloring

Whipped cream, for garnish

Fresh strawberries, sliced, for garnish

Chocolate shavings or sprinkles (optional)


Instructions

  1. In a medium bowl, whisk together the instant vanilla pudding mix and cold milk until smooth and slightly thickened. Let sit for about 5 minutes to firm up.
  2. In a large mixing bowl, beat the softened cream cheese and granulated sugar until light and creamy.
  3. Add the prepared pudding, mint extract, and green food coloring to the cream cheese mixture. Beat until fully combined and evenly tinted.
  4. Gently fold in the whipped topping until the filling is smooth, fluffy, and uniform in color.
  5. Spoon the mint filling into the prepared chocolate cookie crust and smooth the top with a spatula.
  6. Refrigerate for at least 4 hours, or until fully set and chilled.
  7. Before serving, garnish with whipped cream, sliced strawberries, and chocolate shavings or sprinkles if desired. Slice and serve cold.
