Ingredients
1 cup glutinous rice flour (mochiko)
1/4 cup granulated sugar
1 cup water
Cornstarch or potato starch, for dusting
1/2 cup Nutella, chilled
Instructions
- Prepare the Nutella Filling: Scoop small teaspoons of Nutella onto a parchment-lined baking sheet. Freeze for about 30 minutes or until firm.
- Make the Mochi Dough: In a microwave-safe bowl, whisk together the glutinous rice flour, sugar, and water until smooth. Cover with plastic wrap, leaving a small gap for steam to escape. Microwave on high for 2 minutes, stir, and then microwave for another 1 minute until the dough is slightly translucent and sticky. Let cool slightly.
- Assemble the Mochi: Dust a clean surface with cornstarch or potato starch. Transfer the mochi dough onto the surface and divide into small portions. Flatten each portion into a disk. Place a frozen Nutella ball in the center of each disk, fold the edges over the filling, and pinch to seal. Dust with more starch as needed.
- Serve: Enjoy immediately or store in an airtight container at room temperature for up to 2 days.
