Ingredients

1 cup rolled oats

1 teaspoon cinnamon (optional)

2 large eggs

2 tablespoons melted butter or oil

1 teaspoon vanilla extract


Instructions

  1. In a bowl, combine the rolled oats and milk. Let sit for 10 minutes to soften the oats.
  2. In a separate bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using).
  3. Add the eggs, melted butter, and vanilla to the oat mixture, stirring to combine.
  4. Gently fold the dry ingredients into the wet mixture, being careful not to overmix.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Notes

For a naturally sweet twist, add mashed banana to the batter.
