Ingredients
2/3 cup Minute Rice
2 3/4 cups milk
1/3 cup sugar
1 tablespoon butter
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1/4 teaspoon nutmeg
1/2 cup raisins
Cinnamon, for sprinkling
Instructions
- Preheat the oven to 350°F (175°C) and butter a 1-quart baking dish.
- In the baking dish, combine the Minute Rice, milk, raisins, sugar, butter, salt, vanilla extract, and nutmeg. Mix well.
- Bake in the preheated oven for 1 hour, stirring after the first 15 minutes and again when the pudding is done.
- Once baked, sprinkle with cinnamon and serve warm or chilled.
Notes
The pudding will thicken as it cools.
To make it dairy-free, substitute milk with almond, coconut, or oat milk, and replace butter with coconut oil or margarine.
