Ingredients

2/3 cup Minute Rice

2 3/4 cups milk

1/3 cup sugar

1 tablespoon butter

1/2 teaspoon salt

1/2 teaspoon vanilla extract

1/4 teaspoon nutmeg

1/2 cup raisins

Cinnamon, for sprinkling


Instructions

  1. Preheat the oven to 350°F (175°C) and butter a 1-quart baking dish.
  2. In the baking dish, combine the Minute Rice, milk, raisins, sugar, butter, salt, vanilla extract, and nutmeg. Mix well.
  3. Bake in the preheated oven for 1 hour, stirring after the first 15 minutes and again when the pudding is done.
  4. Once baked, sprinkle with cinnamon and serve warm or chilled.

Notes

The pudding will thicken as it cools.

To make it dairy-free, substitute milk with almond, coconut, or oat milk, and replace butter with coconut oil or margarine.

You can omit raisins or substitute them with dried cranberries or chopped dates.
