Ingredients
1 ¾ cups white sugar
1 cup butter
2 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground nutmeg
Instructions
- In a large bowl, beat sugar and butter with an electric mixer until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In a separate bowl, combine flour, baking soda, salt, and nutmeg. Gradually add the dry ingredients to the wet ingredients until a dough forms.
- Knead the dough briefly on a floured surface, then cover and refrigerate for 30 minutes.
- Preheat the oven to 325°F (165°C). Roll the dough to ¼-inch thickness on a floured surface and cut into shapes with cookie cutters.
- Place cookies on ungreased baking sheets, spacing them 1 ½ inches apart.
- Bake for 8–10 minutes, or until edges are lightly golden.
- Let cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
Chilling the dough ensures easier rolling and prevents spreading during baking.
For variation, add cinnamon, ginger, or citrus extracts.
Store in an airtight container at room temperature for up to 5 days.
