A hearty and comforting one-pan meal featuring golden potatoes, seasoned ground beef, melty cheddar cheese, and herbs. Perfect for a quick and satisfying weeknight dinner.
Ingredients
1 lb ground beef (or ground turkey)
4 cups diced potatoes (Yukon Gold or Russet)
1 small onion, diced
3 cloves garlic, minced
1 cup shredded cheddar cheese (plus extra for topping)
1/2 cup beef broth or water
1 tsp smoked paprika
1/2 tsp dried thyme or Italian seasoning
Salt and pepper, to taste
2 tbsp olive oil or butter
Optional garnish: chopped green onions or parsley
Instructions
- Heat 1 tablespoon of oil or butter in a large skillet over medium heat. Add diced potatoes, season with salt and pepper, and cook for 10–12 minutes until they begin to soften and turn golden.
- Push the potatoes to one side and add the remaining oil. Add ground beef, diced onion, and garlic. Cook until the beef is browned, breaking it apart as it cooks.
- Season the mixture with smoked paprika, thyme, salt, and pepper. Mix the potatoes and meat together.
- Pour in the broth or water, cover the skillet, and let it simmer for 5 minutes to allow flavors to meld and potatoes to finish cooking.
- Sprinkle shredded cheddar cheese over the top, cover, and cook for another 2–3 minutes until the cheese melts. Optionally, broil for a couple of minutes to lightly brown the cheese.
- Garnish with chopped green onions or parsley and serve hot.
Notes
Customize with bell peppers, mushrooms, or sweet potatoes for variation.
Swap cheese types based on preference—pepper jack for heat, mozzarella for a milder flavor.
Store leftovers in the fridge for up to 3 days and reheat with a splash of broth or water.
Can be made vegetarian by using plant-based ground and vegetable broth.
