Ingredients

1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

Salt and pepper, to taste

2 tablespoons olive oil

4 tablespoons unsalted butter

6 cloves garlic, minced

2 cups chicken broth

1 cup heavy cream

8 oz wide egg noodles (uncooked)

1/2 cup grated Parmesan cheese

1 teaspoon dried parsley (or 1 tablespoon fresh)

Optional: chopped fresh parsley or extra Parmesan for garnish


Instructions

  1. Season the chicken with salt and pepper.

  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned, about 4–5 minutes. Set aside.

  3. In the same pan, melt butter over medium heat. Add minced garlic and sauté for 30–60 seconds.

  4. Stir in chicken broth and heavy cream.

  5. Add uncooked egg noodles to the pan, pressing them into the liquid. Cover and simmer for 8–10 minutes, stirring occasionally until noodles are tender.

  6. Return chicken to the pan, stir in Parmesan and parsley. Mix until the sauce is creamy and everything is combined.

  7. Remove from heat and let sit for 2–3 minutes to thicken. Garnish with fresh parsley or extra Parmesan if desired. Serve and enjoy!

Notes

For extra veggies, sauté spinach, mushrooms, or peas along with the garlic.

To add heat, sprinkle red pepper flakes or drizzle hot sauce into the sauce.

Use mozzarella, cheddar, or a cheese blend instead of Parmesan for different flavor variations.
