A cozy and hearty one-skillet meal featuring savory ground beef, cheesy tortellini, and a creamy French onion–inspired sauce. Perfect for an easy weeknight dinner with minimal cleanup.
Ingredients
1 lb lean ground beef
½ large yellow onion, diced
2 tsp garlic, minced
1 oz onion soup mix (about one standard envelope)
1 cup peas and carrots (frozen or mixed vegetables)
2 cups low-sodium beef broth
10 oz cheese-filled tortellini (about 3 cups, refrigerated)
1 cup Gruyere cheese, shredded
½ cup sour cream
½ tsp black pepper
Instructions
- Heat a large skillet over medium-high heat. Add ground beef and diced onion, cooking until beef is browned and onions are tender. Drain excess fat.
- Stir in minced garlic and onion soup mix. Cook for about 30 seconds until fragrant.
- Add peas and carrots and pour in beef broth. Bring to a simmer.
- Add tortellini, cover skillet, and cook for about 7 minutes, stirring occasionally, until tortellini is tender.
- Reduce heat to low and stir in sour cream and shredded Gruyere until cheese is melted and sauce is creamy.
- Season with black pepper and serve hot. Garnish with extra cheese or parsley if desired.
Notes
Swap Gruyere for Swiss, mozzarella, or cheddar for a different flavor.
Use mixed vegetables or double the veggies for a vegetarian version.
Add Worcestershire sauce or Dijon mustard for extra umami.
Sauté onions longer for a deeper caramelized flavor.
Store leftovers in the fridge for up to 3 days; reheat gently with a splash of broth or milk if needed.
