Description

Ingredients

1 lb lean ground beef

½ large yellow onion, diced

2 tsp garlic, minced

1 oz onion soup mix (about one standard envelope)

1 cup peas and carrots (frozen or mixed vegetables)

2 cups low-sodium beef broth

10 oz cheese-filled tortellini (about 3 cups, refrigerated)

1 cup Gruyere cheese, shredded

½ cup sour cream

½ tsp black pepper


Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and diced onion, cooking until beef is browned and onions are tender. Drain excess fat.
  2. Stir in minced garlic and onion soup mix. Cook for about 30 seconds until fragrant.
  3. Add peas and carrots and pour in beef broth. Bring to a simmer.
  4. Add tortellini, cover skillet, and cook for about 7 minutes, stirring occasionally, until tortellini is tender.
  5. Reduce heat to low and stir in sour cream and shredded Gruyere until cheese is melted and sauce is creamy.
  6. Season with black pepper and serve hot. Garnish with extra cheese or parsley if desired.

Notes

Swap Gruyere for Swiss, mozzarella, or cheddar for a different flavor.

Use mixed vegetables or double the veggies for a vegetarian version.

Add Worcestershire sauce or Dijon mustard for extra umami.

Sauté onions longer for a deeper caramelized flavor.
