Description

Moist and fragrant mini cakes infused with orange zest, ginger, and honey—perfect for tea time, holidays, or a cozy afternoon treat.


Ingredients

1 1/2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground ginger

1/4 tsp salt

1/2 cup unsalted butter, softened

1/2 cup honey

1/2 cup brown sugar

2 large eggs

1/4 cup orange juice (freshly squeezed)

1 tbsp orange zest

1/2 cup plain Greek yogurt or sour cream

Optional: powdered sugar for dusting


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin or mini bundt pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, ground ginger, and salt.
  3. In a larger bowl, cream the softened butter with honey and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the orange juice, orange zest, and Greek yogurt (or sour cream) until fully combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until incorporated. Do not overmix.
  6. Spoon the batter into the prepared pan, filling each cavity about two-thirds full.
  7. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. Once cooled, dust lightly with powdered sugar if desired before serving.

Notes

For extra flavor, add a pinch of cinnamon or nutmeg.

Use lemon zest and juice for a citrus variation.

Store in an airtight container at room temperature for up to 3 days, refrigerate up to 1 week, or freeze up to 2 months.

Reheat briefly in the microwave for 10–15 seconds if desired.

To prevent sticking, grease and lightly flour the pan, especially for mini bundt pans.
