Ingredients
For the Macaron Shells:
1 cup almond flour
1 ¾ cups powdered sugar

For the Oreo Buttercream Filling:
½ cup unsalted butter, softened
1 ¼ cups powdered sugar
3–4 tablespoons Oreo cookie crumbs (filling removed)
1 teaspoon vanilla extract
1–2 tablespoons milk (if needed for consistency)
Instructions
- Line two baking sheets with parchment paper or silicone baking mats.
- In a food processor, pulse the almond flour, powdered sugar, and Oreo cookie crumbs until finely mixed. Sift the mixture into a bowl, discarding any large pieces.
- In a separate bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form. Stir in the vanilla extract.
- Gently fold the almond-Oreo mixture into the egg whites in three parts until combined.
- Transfer the batter to a piping bag and pipe 1-inch circles onto the prepared baking sheets, spacing them 1 inch apart. Tap the trays to remove air bubbles. Let sit at room temperature for 30-60 minutes, or until the tops form a skin.
- Preheat the oven to 300°F (150°C). Bake for 15-18 minutes, rotating halfway through. Allow to cool completely before removing.
- For the Oreo Buttercream, beat the softened butter until creamy. Add powdered sugar, Oreo cookie crumbs, and vanilla extract, mixing until smooth. Add milk as needed for consistency.
- Pipe buttercream onto the flat side of one macaron shell and sandwich with another.
- Store in an airtight container in the fridge for 24 hours before serving.
