Ingredients
4 medium russet potatoes, peeled and sliced into wedges
1 large yellow onion, sliced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
Salt and black pepper to taste
Optional: fresh parsley for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- In a large mixing bowl, toss the potato wedges and sliced onions with olive oil, garlic powder, smoked paprika, thyme, salt, and black pepper until evenly coated.
- Spread the mixture in a single layer on a parchment-lined baking sheet.
- Roast for 25 minutes, then flip everything with a spatula.
- Return to the oven and roast for another 20–25 minutes, until the potatoes are golden and crispy and the onions are caramelized.
- Garnish with chopped fresh parsley before serving, if desired.
Notes
Add red bell peppers or mushrooms for extra flavor and texture.
Increase smoked paprika or add chili flakes for a smoky kick.
