Description

Ingredients

4 cod fillets (about 6 oz each)

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs (Panko recommended)

2 tbsp olive oil

1 tsp garlic powder

1 tsp paprika

Salt and pepper, to taste

Lemon wedges (for serving)


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, combine Parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper.
  3. Brush cod fillets with olive oil to coat evenly.
  4. Press the Parmesan mixture onto the top of each fillet, ensuring it adheres well.
  5. Place the fillets on the prepared baking sheet and bake for 12-15 minutes, until the fish is flaky and the crust is golden brown.
  6. Serve immediately with lemon wedges.

Notes

For a herby variation, mix chopped parsley or dried Italian herbs into the breadcrumb mixture.

To add spice, include a pinch of cayenne or red pepper flakes.

Gluten-free breadcrumbs can be used for a gluten-free version.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven at 350°F for 8-10 minutes.
