Ingredients
4 cod fillets (about 6 oz each)
1/2 cup grated Parmesan cheese
1/4 cup breadcrumbs (Panko recommended)
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt and pepper, to taste
Lemon wedges (for serving)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small bowl, combine Parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper.
- Brush cod fillets with olive oil to coat evenly.
- Press the Parmesan mixture onto the top of each fillet, ensuring it adheres well.
- Place the fillets on the prepared baking sheet and bake for 12-15 minutes, until the fish is flaky and the crust is golden brown.
- Serve immediately with lemon wedges.
Notes
For a herby variation, mix chopped parsley or dried Italian herbs into the breadcrumb mixture.
