1/2 teaspoon baking powder
1/2 cup pastel-colored candy-coated chocolates (such as M&Ms or similar)

- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, salt, and baking powder.
- Gradually mix the dry ingredients into the butter mixture until a soft dough forms.
- Roll tablespoon-sized portions of dough into balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Gently press a few pastel candies into the top of each dough ball.
- Bake for 10-12 minutes, or until the edges of the cookies are lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a twist, try swapping the pastel candy-coated chocolates with chocolate chips, caramel bits, or fruit-flavored candies.
The dough can be frozen for later use. Just roll it into balls, freeze, and bake when desired.
If you’re making these cookies egg-free, consider using a flax egg (1 tablespoon ground flaxseed + 2.5 tablespoons water) or an egg replacer.
