Ingredients

1 cup unsalted butter, softened

2 cups granulated sugar

3 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup sour cream

2 cups diced fresh peaches (about 23 peaches)

For the Brown Sugar Frosting:

1/2 cup unsalted butter

1 cup packed brown sugar

1/4 cup whole milk

2 cups powdered sugar

Instructions

  1. Preheat your oven to 325°F (165°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs, one at a time, followed by the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the sour cream.
  6. Gently fold in the diced peaches until evenly distributed throughout the batter.
  7. Spread the batter into the prepared baking pan and bake for 40-45 minutes.
  8. While the cake is baking, prepare the Brown Sugar Frosting by melting butter in a saucepan, then adding brown sugar and milk. Boil for 2 minutes, then remove from heat and whisk in powdered sugar.
  9. Pour the warm frosting over the warm cake once it’s out of the oven.
  10. Allow the cake to cool completely before serving. Enjoy!

Notes

For the best results, use ripe and juicy peaches for maximum flavor.

Make sure to cool the cake completely before frosting to prevent the frosting from melting.
