Ingredients

For the Peach Filling:

6 cups fresh peaches, peeled and sliced (or 2 cans of sliced peaches, drained)

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

2 tablespoons cornstarch

For the Cobbler Topping:

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon ground ginger (optional)

1/2 cup unsalted butter, chilled and cubed

1/4 cup buttermilk

Zest of 1 lemon (optional, for extra citrus flavor)

For the Spiced Crumb Topping (Twist):

1/2 cup all-purpose flour

1/4 cup granulated sugar

1/4 cup brown sugar, packed

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 cup unsalted butter, melted


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix peaches with granulated sugar, brown sugar, lemon juice, vanilla extract, ground cinnamon, ground nutmeg, and cornstarch. Pour into a greased 9×13-inch baking dish.
  3. For the cobbler topping, combine flour, granulated sugar, brown sugar, baking powder, salt, ground cinnamon, and ground ginger. Cut in chilled butter until mixture resembles coarse crumbs. Stir in buttermilk and lemon zest. Spread over peach mixture.
  4. For the spiced crumb topping, mix flour, granulated sugar, brown sugar, ground cinnamon, and ground nutmeg. Drizzle in melted butter and stir until clumpy. Sprinkle over cobbler topping.
  5. Bake for 35-40 minutes until topping is golden brown and filling is bubbling.
