These Peach Crumble Bars are a delightful dessert with a juicy peach filling and a buttery, crumbly topping. They’re perfect for any occasion and easy to make.
Ingredients
3 cups fresh or frozen peaches, chopped
1 tablespoon lemon juice
1/2 cup sugar
1 tablespoon cornstarch
1 1/2 cups all-purpose flour
1/2 cup rolled oats
1/2 cup brown sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup cold butter, cubed
1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan and set it aside.
- In a medium bowl, mix the chopped peaches with lemon juice, sugar, and cornstarch. Set aside to macerate while you prepare the crumble topping.
- In a large bowl, combine the flour, oats, brown sugar, baking powder, and salt.
- Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or fork to blend the butter until the mixture resembles coarse crumbs.
- Stir in the vanilla extract.
- Press about 2/3 of the crumble mixture into the bottom of the prepared baking pan to form the crust.
- Spoon the peach mixture over the crust and spread it evenly.
- Sprinkle the remaining crumble mixture on top of the peaches.
- Bake for 35-40 minutes, or until the top is golden and the filling is bubbling.
- Allow the bars to cool for at least 15 minutes before slicing.
Notes
You can use frozen peaches, just make sure to thaw and drain them before using to avoid extra moisture.
These bars can be made up to 2 days ahead and stored in an airtight container in the refrigerator.
If you’re not a fan of oats, you can substitute them with additional flour in the topping.
Add chopped nuts like pecans or walnuts for extra crunch in the topping.
To store longer, keep the bars in the fridge for up to 5 days.
