Description

Peanut Butter Balls with Rice Krispies are delicious, bite-sized, no-bake treats that combine creamy peanut butter, crunchy Rice Krispies, and a smooth chocolate coating. Perfect for holidays, parties, or a quick sweet snack, these easy-to-make peanut butter balls are a crowd favorite. With minimal prep time and simple ingredients, they offer a delightful balance of flavors and textures in every bite.

Ingredients

1 cup creamy peanut butter

¼ cup softened butter

1 cup powdered sugar

2 cups Rice Krispies cereal (slightly crushed)

2 cups semi-sweet chocolate chips

2 tablespoons vegetable shortening

Instructions

  1. Prepare the baking sheet: Line a baking sheet with parchment or wax paper and set aside.
  2. Make the peanut butter mixture: In a large bowl, cream together the peanut butter, softened butter, and powdered sugar until smooth.
  3. Mix in Rice Krispies: Gently fold in the slightly crushed Rice Krispies until evenly combined.
  4. Shape into balls: Roll the mixture into small bite-sized balls and place them on the prepared baking sheet. Chill in the refrigerator for at least 30 minutes to firm up.
  5. Melt the chocolate coating: In a microwave-safe bowl, melt the chocolate chips and vegetable shortening together. Heat in 1-minute intervals, stirring after each, until fully melted and smooth.
  6. Coat the peanut butter balls: Dip each chilled ball into the melted chocolate, ensuring it’s fully coated. Let any excess chocolate drip off and return to the baking sheet.
  7. Chill to set: Refrigerate the chocolate-coated peanut butter balls until the chocolate is set (about 10-15 minutes).

Notes

You can use crunchy peanut butter for a different texture.

These peanut butter balls can be made ahead and stored in the refrigerator for up to a week.

Feel free to experiment with different chocolate types (milk, dark, or white) for the coating.
