Ingredients
1 cup creamy peanut butter (natural, unsweetened)
1 cup heavy whipping cream
1/4 cup powdered sugar or maple syrup (adjust to taste)
1 teaspoon vanilla extract
1/2 cup roasted peanuts, roughly chopped
Instructions
- Whip the heavy cream in a large mixing bowl using an electric mixer until soft peaks form.
- In a separate bowl, combine peanut butter, powdered sugar (or maple syrup), and vanilla extract until smooth and creamy.
- Gently fold the whipped cream into the peanut butter mixture, mixing carefully to keep the mousse light and airy.
- Fold in half of the chopped roasted peanuts to add crunch throughout the mousse.
- Spoon the mousse into serving glasses or bowls, then sprinkle the remaining peanuts on top for garnish and extra texture.
- Refrigerate the mousse for at least 1 hour to allow it to set and chill before serving.
Notes
You can swap powdered sugar for maple syrup or honey for a natural sweetener.
Add a pinch of sea salt to enhance peanut butter flavor.
Mix in mini chocolate chips or swirl melted dark chocolate for a peanut butter-chocolate twist.
For a vegan version, replace half the heavy cream with whipped aquafaba or use coconut cream.
