Ingredients

For the Brownies:

2 oz unsweetened chocolate, melted

1/3 cup canola oil

2 eggs

1 cup sugar

3/4 cup flour

1/2 tsp baking powder

1/2 tsp salt

For the Topping:

1 cup chocolate chips (semi-sweet or milk chocolate)

1 cup chopped peanut butter cups

For the Filling:

1 bag peanut butter cups, unwrapped


Instructions

  1. Preheat the oven to 350°F (175°C). Prepare an 8-inch baking dish by spraying with non-stick spray or lining with foil/parchment.
  2. In a bowl, mix the melted chocolate and oil until smooth. Stir in eggs and sugar.
  3. Add flour, baking powder, and salt, mixing until just combined.
  4. Spread half the brownie batter into the baking dish. Layer peanut butter cups evenly over the batter.
  5. Pour the remaining brownie batter over the peanut butter cups, spreading evenly.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out mostly clean.
  7. Sprinkle chocolate chips over the baked brownies immediately. Cover with foil for 10 minutes to melt the chocolate.
  8. Spread melted chocolate across the brownies and sprinkle with chopped peanut butter cups.
  9. Cool completely before slicing and serving.

Notes

For richer flavor, use dark chocolate chips for the topping.
