Instructions
- In a large bowl, whisk together flour and eggs.
- Gradually add milk and water, stirring to combine. Add salt, melted butter, and sugar (if making sweet crepes). Beat until smooth.
- Rest the batter for 30 minutes (optional).
- Heat a lightly buttered or oiled skillet over medium heat.
- Pour about ¼ cup of batter into the pan and swirl to spread it evenly.
- Cook for 1-2 minutes until edges lift and bottom is golden. Flip and cook the other side for 30 seconds to 1 minute.
- Repeat with remaining batter and serve with your favorite fillings.
Notes
For softer crepes, resting the batter for 30 minutes is recommended but optional.
