Description
A refreshing tropical mocktail made with pineapple juice, creamy coconut milk, fresh mint, and lime, finished with sparkling water for a light fizz. This alcohol-free drink is bright, cooling, and perfect for warm days or festive gatherings.
Ingredients
1 cup pineapple juice
1/2 cup coconut milk
1/2 cup sparkling water or soda water
6–8 fresh mint leaves
2 tablespoons fresh lime juice
1–2 tablespoons honey or simple syrup (optional)

Pineapple wedge for garnish
Lime slices for garnish
Mint sprigs for garnish
Instructions
- Add the fresh mint leaves and lime juice to a shaker or mixing glass and gently muddle the mint to release its aroma.
- Pour in the pineapple juice and coconut milk. Add honey or simple syrup if additional sweetness is desired.
- Add a handful of ice and shake well until the mixture becomes chilled and slightly creamy.
- Strain the mixture into a serving glass filled with fresh ice.
- Top with sparkling water or soda water and gently stir to combine without losing the fizz.
- Garnish with a pineapple wedge, lime slice, and a sprig of mint. Serve immediately.
Notes
For a creamier version, replace part of the coconut milk with coconut cream.
Add extra lime juice for a brighter citrus flavor.
Blend fresh pineapple chunks into the drink for a fruitier variation.
Use flavored sparkling water such as lime or coconut for added flavor.
For a frozen version, blend all ingredients with crushed ice instead of shaking.
You can prepare the juice, coconut milk, lime juice, and sweetener mixture ahead and refrigerate up to 24 hours. Add sparkling water just before serving.
