Ingredients
3 cups diced fresh pineapple
1 cup thinly sliced jalapeño peppers
1 cup apple cider vinegar
2 cups granulated sugar
2 tablespoons lemon juice
Instructions
- In a medium saucepan, combine apple cider vinegar, granulated sugar, and lemon juice. Bring to a boil, stirring until sugar dissolves.
- Lower the heat and simmer for 5 minutes to create a syrup.
- Add diced pineapple and sliced jalapeños. Stir gently to combine.
- Simmer on low heat for 10-15 minutes until jalapeños soften and pineapple absorbs the syrup flavor.
- Remove from heat and let cool slightly.
- Transfer into sterilized jars or an airtight container. Refrigerate for up to 2 weeks.
Notes
Adjust spice levels by adding more jalapeños or removing their seeds for milder heat.
Fresh pineapple works best, but canned (in juice, not syrup) can be substituted if well-drained.
