Description

Ingredients

3 cups diced fresh pineapple

1 cup thinly sliced jalapeño peppers

1 cup apple cider vinegar

2 cups granulated sugar

2 tablespoons lemon juice


Instructions

  1. In a medium saucepan, combine apple cider vinegar, granulated sugar, and lemon juice. Bring to a boil, stirring until sugar dissolves.
  2. Lower the heat and simmer for 5 minutes to create a syrup.
  3. Add diced pineapple and sliced jalapeños. Stir gently to combine.
  4. Simmer on low heat for 10-15 minutes until jalapeños soften and pineapple absorbs the syrup flavor.
  5. Remove from heat and let cool slightly.
  6. Transfer into sterilized jars or an airtight container. Refrigerate for up to 2 weeks.

Notes

Adjust spice levels by adding more jalapeños or removing their seeds for milder heat.

Fresh pineapple works best, but canned (in juice, not syrup) can be substituted if well-drained.

Not intended for long-term canning.
