Description

Pizza Pancakes are a fun and savory twist on traditional pancakes, combining the classic flavors of pizza with fluffy, golden pancakes. Filled with gooey mozzarella cheese, mini pepperoni slices, black olives, bell peppers, and optional mushrooms, these pancakes are perfect for a quick and delicious dinner. Serve with marinara sauce for dipping to elevate the pizza experience in every bite. Ideal for a creative meal that the whole family will love!

Ingredients

1 1/2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon Italian seasoning

1/2 teaspoon salt

1 1/4 cups milk

1 large egg

2 tablespoons vegetable oil

1/2 cup shredded mozzarella cheese

1/2 cup mini pepperoni slices

1/4 cup sliced black olives

1/4 cup diced bell peppers

1/4 cup sliced mushrooms (optional)

1/4 cup marinara sauce (for serving)

Instructions

  1. In a large bowl, whisk together the flour, baking powder, garlic powder, Italian seasoning, and salt.
  2. In a separate bowl, combine the milk, egg, and vegetable oil. Pour the wet ingredients into the dry ingredients and stir until just combined.
  3. Fold in the shredded mozzarella cheese, mini pepperoni slices, black olives, diced bell peppers, and sliced mushrooms (if using).
  4. Heat a lightly greased skillet or griddle over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake.
  5. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip the pancakes and cook for an additional 2-3 minutes, until golden brown.
  6. Serve warm with marinara sauce for dipping.

Notes

Customize your pancakes by adding other favorite pizza toppings or using different types of cheese.

Keep cooked pancakes warm in a 200°F oven while preparing the rest of the batch.

Freezes well; reheat in a skillet or toaster oven for best results.
