Ingredients
4 medium russet potatoes, peeled and diced into small cubes
1 red bell pepper, diced
1 green bell pepper, diced

1/4 tsp dried thyme (optional)
Salt and pepper, to taste

Instructions
- Prepare the Potatoes: Boil diced potatoes in salted water for 5-7 minutes until slightly tender. Drain and pat dry.
- Heat the Skillet: Warm olive oil or butter in a large skillet over medium heat.
- Cook the Potatoes: Spread potatoes in a single layer in the skillet. Cook undisturbed for 5-7 minutes until crispy. Flip and cook for another 5 minutes.
- Add Peppers and Onions: Mix in bell peppers and onions. Cook for 5-7 minutes until softened and caramelized.
- Season: Sprinkle garlic powder, smoked paprika, thyme, salt, and pepper. Stir to combine.
- Serve: Garnish with fresh parsley and serve hot.
