Description

Ingredients

4 medium russet potatoes, peeled and diced into small cubes

1 red bell pepper, diced

1 green bell pepper, diced

1 small onion, finely chopped

3 tbsp olive oil or butter

1/2 tsp garlic powder

1/2 tsp smoked paprika (optional)

1/4 tsp dried thyme (optional)

Salt and pepper, to taste

Chopped fresh parsley (for garnish)


Instructions

  1. Prepare the Potatoes: Boil diced potatoes in salted water for 5-7 minutes until slightly tender. Drain and pat dry.
  2. Heat the Skillet: Warm olive oil or butter in a large skillet over medium heat.
  3. Cook the Potatoes: Spread potatoes in a single layer in the skillet. Cook undisturbed for 5-7 minutes until crispy. Flip and cook for another 5 minutes.
  4. Add Peppers and Onions: Mix in bell peppers and onions. Cook for 5-7 minutes until softened and caramelized.
  5. Season: Sprinkle garlic powder, smoked paprika, thyme, salt, and pepper. Stir to combine.
  6. Serve: Garnish with fresh parsley and serve hot.

For extra crispiness, ensure potatoes are completely dry before cooking.
