Description

Ingredients

For the Donuts:

1 ¾ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

¾ cup granulated sugar

½ cup pumpkin puree

2 large eggs

¼ cup milk

⅓ cup vegetable oil

1 teaspoon vanilla extract

For the Cinnamon Sugar Coating:

½ cup granulated sugar

1 teaspoon ground cinnamon

3 tablespoons unsalted butter, melted


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a donut pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a large bowl, mix sugar, pumpkin puree, eggs, milk, vegetable oil, and vanilla extract until smooth.
  4. Gradually combine the dry ingredients with the wet ingredients, stirring until just mixed. Avoid overmixing.
  5. Transfer the batter to a piping bag or zip-top bag with the corner snipped. Pipe batter into the donut pan, filling each cavity ¾ full.
  6. Bake for 12-15 minutes or until a toothpick comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.
  7. For the coating, mix sugar and cinnamon in a small bowl. Brush each donut with melted butter and dip in the cinnamon sugar.
  8. Serve warm or at room temperature.

Notes

Use pure pumpkin puree, not pumpkin pie filling, for the best texture and flavor.

Avoid overmixing to keep the donuts light and fluffy.

Store leftover donuts in an airtight container for up to 2 days at room temperature.
