Ingredients
For the Donuts:
1 ¾ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda

½ teaspoon ground ginger
¾ cup granulated sugar
½ cup pumpkin puree
2 large eggs
¼ cup milk
⅓ cup vegetable oil
1 teaspoon vanilla extract
For the Cinnamon Sugar Coating:
½ cup granulated sugar
1 teaspoon ground cinnamon
3 tablespoons unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C) and grease a donut pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- In a large bowl, mix sugar, pumpkin puree, eggs, milk, vegetable oil, and vanilla extract until smooth.
- Gradually combine the dry ingredients with the wet ingredients, stirring until just mixed. Avoid overmixing.
- Transfer the batter to a piping bag or zip-top bag with the corner snipped. Pipe batter into the donut pan, filling each cavity ¾ full.
- Bake for 12-15 minutes or until a toothpick comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.
- For the coating, mix sugar and cinnamon in a small bowl. Brush each donut with melted butter and dip in the cinnamon sugar.
- Serve warm or at room temperature.

Use pure pumpkin puree, not pumpkin pie filling, for the best texture and flavor.
