Description

This Pumpkin French Toast Casserole is a cozy and delicious fall breakfast dish, perfect for any occasion. Made with rich pumpkin puree, warm spices, and a delightful streusel topping, this casserole is easy to prepare and sure to impress. Ideal for holiday mornings or weekend brunches, it’s a seasonal favorite that combines the comforting flavors of pumpkin pie with the classic appeal of French toast.

Ingredients

1 loaf French bread, cut into cubes

8 large eggs

2 cups milk

1 cup pumpkin puree

1/2 cup granulated sugar

1/2 cup brown sugar

1 tablespoon vanilla extract

1 tablespoon ground cinnamon

1 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1/2 teaspoon salt

Topping:

1/2 cup all-purpose flour

1/2 cup brown sugar

1 teaspoon ground cinnamon

1/4 cup butter, cold and cut into small pieces

Instructions

  1. Grease a 9×13 inch baking dish and place the bread cubes evenly in the dish.
  2. In a large bowl, whisk together the eggs, milk, pumpkin puree, granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, cloves, and salt.
  3. Pour the egg mixture over the bread cubes, making sure all pieces are coated.
  4. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight.
  5. Preheat your oven to 350°F (175°C).
  6. In a medium bowl, mix the flour, brown sugar, and cinnamon. Cut in the butter until the mixture resembles coarse crumbs.
  7. Sprinkle the topping evenly over the bread mixture.
  8. Bake for 45-55 minutes, or until the top is golden brown and the center is set.
  9. Let the casserole cool for 10 minutes before serving.

Notes

Stale Bread: Using day-old French bread helps absorb the egg mixture better without becoming too soggy.

Overnight Soak: For maximum flavor, let the bread soak in the egg mixture overnight.

Doneness Check: The casserole is ready when the center is set and a knife inserted comes out clean.
