Ingredients

For the Cake Base:

1 box yellow cake mix

1 large egg

½ cup unsalted butter, melted

1 cup pumpkin puree

1 tsp vanilla extract

For the Pumpkin Spice Gooey Filling:

8 oz cream cheese, softened

2 large eggs

1 tsp vanilla extract

½ cup pumpkin puree

½ cup unsalted butter, melted

1 tsp ground cinnamon

½ tsp ground nutmeg

¼ tsp ground cloves

4 cups powdered sugar

For the Brown Sugar Cream Cheese Frosting:

8 oz cream cheese, softened

¼ cup unsalted butter, softened

¼ cup brown sugar, packed

2 cups powdered sugar

Instructions

  1. Prepare the Cake Base: Preheat the oven to 350°F (175°C). Grease or line a 9×13-inch baking dish. In a bowl, mix yellow cake mix, egg, melted butter, pumpkin puree, and vanilla extract until smooth. Spread evenly in the prepared dish.
  2. Make the Filling: Beat cream cheese until fluffy. Add eggs, vanilla, pumpkin puree, melted butter, cinnamon, nutmeg, and cloves. Mix until smooth. Gradually add powdered sugar and mix until fully incorporated. Pour the filling over the cake base.
  3. Bake the Cake: Bake for 40-50 minutes until the edges are set but the center remains slightly gooey. Let the cake cool completely.
  4. Prepare the Frosting: Beat cream cheese, butter, and brown sugar until creamy. Gradually add powdered sugar and mix until smooth.
  5. Frost and Serve: Spread frosting over the cooled cake. Slice into 12 servings and enjoy!

Notes

For best results, make sure all ingredients are at room temperature, especially the cream cheese and butter.

Don’t overbake the cake; the center should remain gooey for the perfect texture.

Garnish with whipped cream or a drizzle of caramel sauce for extra indulgence.
