Description

These Pumpkin Spice No-Bake Cookies are the perfect fall treat, combining cozy pumpkin spice flavors with the ease of a no-bake recipe. Ready in just 40 minutes, this healthy dessert uses rolled oats, peanut butter, and pumpkin puree, making it a nutritious, gluten-free option. Enjoy these cookies chilled for a soft, chewy bite without ever turning on the oven!

Ingredients

3 cups rolled oats

1 cup pumpkin puree

1/2 cup peanut butter

1/2 cup honey or maple syrup

1/4 cup unsweetened cocoa powder

1/2 teaspoon pumpkin pie spice

1/4 teaspoon cinnamon

1 teaspoon vanilla extract

1/4 teaspoon salt

Instructions

  1. In a medium saucepan, combine peanut butter, honey (or maple syrup), cocoa powder, and salt. Cook over medium heat, stirring constantly until smooth.
  2. Remove from heat and stir in the pumpkin puree, pumpkin pie spice, cinnamon, and vanilla extract until well mixed.
  3. Add the rolled oats and stir until evenly coated.
  4. Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
  5. Refrigerate the cookies for at least 30 minutes to set. Once firm, serve or store in an airtight container.

Notes

Substitute peanut butter with almond or sunflower seed butter for a different flavor.

Use maple syrup instead of honey for a vegan version.

Store cookies in the fridge for up to 1 week or freeze for up to 2 months.
