Ingredients
1 1/2 cups rolled oats
1/2 cup almond butter
1/3 cup pumpkin puree
1/4 cup honey or maple syrup
1/4 cup protein powder (vanilla or unflavored)
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
Pinch of salt
Optional: chocolate chips, chopped nuts, dried fruit
Instructions
- In a large mixing bowl, combine rolled oats, almond butter, pumpkin puree, honey or maple syrup, protein powder, pumpkin pie spice, cinnamon, vanilla extract, and a pinch of salt. Stir until well combined.
- Adjust the consistency if needed: add more pumpkin puree or honey/maple syrup if too dry, or add more oats or protein powder if too wet.
- Using a small cookie scoop or your hands, roll the mixture into bite-sized balls and place them on a parchment-lined baking sheet.
- Refrigerate the protein balls for at least 30 minutes to firm up.
- Transfer the chilled protein balls to an airtight container and store in the refrigerator.
