Ingredients

1 pound shrimp, peeled and deveined

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 medium carrot, chopped

1 celery stalk, chopped

1 can (14.5 oz) diced tomatoes

4 cups seafood broth (or chicken broth)

1/2 teaspoon chili flakes (adjust to desired spice level)

1/2 teaspoon smoked paprika

1/2 teaspoon ground cumin

1 tablespoon lemon juice

Salt and pepper, to taste

Fresh cilantro, for garnish

Optional: a pinch of red pepper flakes for extra heat


Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, garlic, carrot, and celery. Sauté for 5-7 minutes until softened and fragrant.
  2. Stir in the diced tomatoes, seafood broth, chili flakes, smoked paprika, cumin, and a pinch of salt and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
  3. Add the shrimp to the pot and cook for 3-4 minutes, or until the shrimp are pink and cooked through.
  4. Stir in the lemon juice and adjust seasoning with salt, pepper, and extra chili flakes if you prefer more heat.

Notes

Spice Level: Adjust chili flakes for more or less heat.

Variations: Swap shrimp for chicken or fish. Add extra chili peppers for more spice.
