1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 medium carrot, chopped
1 celery stalk, chopped
1 can (14.5 oz) diced tomatoes
4 cups seafood broth (or chicken broth)
1/2 teaspoon chili flakes (adjust to desired spice level)
1/2 teaspoon smoked paprika
1/2 teaspoon ground cumin
1 tablespoon lemon juice
Salt and pepper, to taste
Fresh cilantro, for garnish
Optional: a pinch of red pepper flakes for extra heat
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion, garlic, carrot, and celery. Sauté for 5-7 minutes until softened and fragrant.
- Stir in the diced tomatoes, seafood broth, chili flakes, smoked paprika, cumin, and a pinch of salt and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add the shrimp to the pot and cook for 3-4 minutes, or until the shrimp are pink and cooked through.
- Stir in the lemon juice and adjust seasoning with salt, pepper, and extra chili flakes if you prefer more heat.
- Ladle the soup into bowls and garnish with fresh cilantro.
- Serve immediately with crusty bread or over cooked rice for a complete meal.
Notes
Spice Level: Adjust chili flakes for more or less heat.
Variations: Swap shrimp for chicken or fish. Add extra chili peppers for more spice.
Storage: Refrigerate leftovers in an airtight container for up to 2-3 days. Reheat on the stove, adding broth if the soup thickens.
Freezer-Friendly: Not recommended due to the shrimp’s texture after freezing.
