Ingredients
1 cup frozen raspberries
3/4 cup chilled pineapple juice
1/2 cup cream of coconut
2 tablespoons coconut water
1 cup crushed ice
Fresh raspberries for garnish
Pineapple wedge for garnish
Mint leaves for garnish
Instructions
- Place the serving glass in the freezer for 5 to 10 minutes so the drink stays extra cold.
- Add frozen raspberries, pineapple juice, cream of coconut, coconut water, and crushed ice to a high-powered blender.
- Blend on high speed until the mixture becomes smooth, creamy, and fully combined.
- Taste the drink and adjust if needed. If it is too thick, add a small splash of pineapple juice and blend briefly again.
- Pour the frozen mixture into the chilled glass.
- Garnish with fresh raspberries, a pineapple wedge, and mint leaves. Serve immediately while cold and refreshing.
Notes
You can replace part of the raspberries with strawberries or mango for a sweeter tropical flavor.
Add frozen pineapple chunks for a thicker smoothie-like texture.
For a lighter drink, reduce the cream of coconut slightly and increase the coconut water.
A squeeze of fresh lime juice adds a bright citrus balance to the sweetness.
