Description

Ingredients

1 box chocolate cake mix

1/2 cup vegetable oil

1 1/4 cup water

3 eggs (or as directed by the cake mix, adding an extra egg for extra richness)

1 package (3.9 oz) instant chocolate pudding mix

2 cups creamy peanut butter

2 cups powdered sugar

4 tablespoons butter, melted

2 cups semi-sweet chocolate chips

1 cup heavy cream

1 bag (8 oz.) mini Reese’s peanut butter cups (for garnish)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a large bowl, combine the chocolate cake mix, vegetable oil, water, eggs, and instant chocolate pudding mix. Beat with an electric mixer until smooth.
  3. Divide the batter evenly between the prepared cake pans. Bake according to the instructions on the cake mix box or until a toothpick inserted into the center comes out clean.
  4. Allow the cakes to cool completely on a wire rack.
  5. To make the peanut butter filling, cream together the creamy peanut butter, powdered sugar, and melted butter until smooth and spreadable.
  6. Place one cake layer on a serving plate. Spread the peanut butter filling over the top. Carefully place the second cake layer on top.
  7. To make the chocolate ganache, heat the heavy cream in a saucepan until simmering. Remove from heat and pour over the chocolate chips. Let sit for 5 minutes, then whisk until smooth.
  8. Pour the ganache over the top of the cake, allowing it to drip down the sides.
  9. Garnish the cake with mini Reese’s peanut butter cups.

Notes
