Description

Creamy and delicately sweet, Ricotta Pistachio Honey Bites are an elegant no-bake dessert featuring ricotta, pistachios, lemon zest, and honey. They come together in minutes and are naturally gluten-free and vegetarian.


Ingredients

1 cup whole milk ricotta cheese

2 tablespoons honey, plus more for drizzling

1/2 teaspoon pure vanilla extract

1/2 cup shelled unsalted pistachios, finely chopped

Zest of 1 lemon

Pinch of sea salt

Optional: 1/4 teaspoon ground cardamom or cinnamon

Optional: phyllo shells or mini tart cups for serving


Instructions

  1. In a medium mixing bowl, combine the ricotta, honey, vanilla extract, lemon zest, sea salt, and optional cardamom or cinnamon. Stir until smooth and creamy.
  2. Use a small cookie scoop or spoon to form bite-sized portions of the ricotta mixture.
  3. Roll or gently press each bite into the chopped pistachios, coating as desired.
  4. Optional: Place each bite into a phyllo shell or mini tart cup for presentation.
  5. Drizzle with additional honey just before serving.
  6. Serve immediately or refrigerate in an airtight container for up to 2 days.

Notes

Chill the ricotta mixture for 15–30 minutes before shaping for firmer bites.

Use whole milk ricotta and drain slightly if too wet for best consistency.

Drizzle honey just before serving for a glossy finish.

Store in the fridge; not recommended for freezing.

Customize with orange zest, dried fruits, or floral waters for variety.
