Ingredients
1 cup whole milk ricotta cheese
2 tablespoons honey, plus more for drizzling
1/2 teaspoon pure vanilla extract
1/2 cup shelled unsalted pistachios, finely chopped
Zest of 1 lemon
Pinch of sea salt
Optional: 1/4 teaspoon ground cardamom or cinnamon
Optional: phyllo shells or mini tart cups for serving
Instructions
- In a medium mixing bowl, combine the ricotta, honey, vanilla extract, lemon zest, sea salt, and optional cardamom or cinnamon. Stir until smooth and creamy.
- Use a small cookie scoop or spoon to form bite-sized portions of the ricotta mixture.
- Roll or gently press each bite into the chopped pistachios, coating as desired.
- Optional: Place each bite into a phyllo shell or mini tart cup for presentation.
- Drizzle with additional honey just before serving.
- Serve immediately or refrigerate in an airtight container for up to 2 days.

Chill the ricotta mixture for 15–30 minutes before shaping for firmer bites.
Use whole milk ricotta and drain slightly if too wet for best consistency.
