Ingredients
2 lbs baby potatoes, halved
3 tablespoons unsalted butter, melted
3 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon paprika
Salt and pepper to taste
1 tablespoon fresh parsley, chopped
Extra Parmesan and parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large bowl, mix melted butter, garlic, Parmesan, Italian seasoning, paprika, salt, and pepper.
- Add halved potatoes to the mixture and toss until evenly coated.
- Arrange potatoes cut-side down on the baking sheet.
- Roast for 25-30 minutes, turning them halfway through, until golden brown and crispy.
- Remove from the oven and garnish with fresh parsley and extra Parmesan. Serve hot.
Notes
For extra crispiness, broil the potatoes for 2-3 minutes at the end of roasting.
This dish pairs wonderfully with grilled meats, roasted vegetables, or a fresh green salad.
