Description

Rotel Rice is a quick and flavorful side dish that combines white rice with spicy tomatoes and green chilies. Perfect for pairing with Mexican-inspired dishes like tacos, enchiladas, and grilled meats, this simple recipe takes just 25 minutes to make. Easy to prepare and versatile, Rotel Rice is an excellent way to add bold flavors to your meal without any hassle.

Ingredients

1 cup long-grain white rice

1 tablespoon olive oil or butter

1 can Rotel tomatoes with green chilies (10 oz), undrained

1 ½ cups chicken or vegetable broth

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

Fresh cilantro, chopped, for garnish (optional)

Instructions

  1. Toast the Rice: In a medium saucepan, heat olive oil or butter over medium heat. Add the rice and sauté for 1-2 minutes until lightly golden.
  2. Combine Ingredients: Add the undrained Rotel tomatoes and broth, followed by garlic powder, onion powder, salt, and pepper. Stir to mix evenly.
  3. Cook the Rice: Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 15-18 minutes, or until the rice is tender and the liquid has been absorbed.
  4. Fluff and Serve: Remove from heat and let sit for 5 minutes. Fluff with a fork and garnish with cilantro before serving.

Notes

Spice Level: Adjust the heat by using mild or hot Rotel tomatoes depending on your preference.

Add-Ins: Feel free to stir in extras like corn, black beans, or shredded cheese to make this dish even heartier.

Reheat: To reheat leftovers, simply microwave with a splash of broth or water to keep it moist.
