Description

Ingredients

3 cups all-purpose flour

3 cloves garlic, minced

1/2 teaspoon instant yeast

1 1/2 cups water, at room temperature

2 tablespoons cornmeal (for sprinkling)


Instructions

  1. Mix the Dough: In a large bowl, combine the flour, minced garlic, rosemary, salt, pepper, and yeast. Add the water and stir with a wooden spoon or your hand until a wet, sticky dough forms (about 30 seconds).
  2. First Rise: Cover the bowl with plastic wrap and allow the dough to rest at room temperature for 18-24 hours, until the surface is bubbly and dotted with bubbles.
  3. Prepare the Skillet: Lightly oil a 10-inch cast-iron skillet or coat with nonstick spray. Sprinkle with cornmeal to prevent sticking.
  4. Shape the Dough & Second Rise: On a floured surface, shape the dough into a round and place it in the prepared skillet. Cover with a dishtowel and let rise at room temperature for 2 hours or until doubled in size.
  5. Bake: Preheat oven to 450°F (232°C). Place the skillet in the oven and bake for 30-40 minutes, or until golden brown and hollow when tapped.
  6. Serve: Let the bread cool slightly, then slice and serve warm.

Notes

Flavor Adjustment: You can adjust the amount of rosemary to suit your taste. More rosemary will intensify the herbal flavor.
