Description

These Salted Brownie Cookies combine the fudgy texture of brownies with the crunch of cookies, topped with a sprinkle of flaky sea salt for the perfect sweet-salty balance.


Ingredients

1/2 cup unsalted butter

8 oz semi-sweet chocolate, chopped

1 cup granulated sugar

1/2 cup packed brown sugar

3 large eggs

1 tsp vanilla extract

1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1 tsp baking powder

1/2 tsp salt

Flaky sea salt (for topping)


Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Melt the butter and chopped semi-sweet chocolate together in a heatproof bowl, stirring until smooth, then cool slightly.
  3. Beat the granulated sugar, brown sugar, and eggs in a large bowl until light and fluffy.
  4. Mix in the vanilla extract and melted chocolate mixture.
  5. Whisk together the flour, cocoa powder, baking powder, and salt in a separate bowl.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Scoop tablespoon-sized balls of dough and place them about 2 inches apart on the prepared baking sheets.
  8. Sprinkle the tops of the dough balls with flaky sea salt.
  9. Bake for 10-12 minutes, until the edges are set and the centers are slightly soft.
  10. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

Feel free to add chopped nuts or chocolate chips for extra texture and flavor.

Store cookies in an airtight container at room temperature for up to 4-5 days or refrigerate for up to a week.

If you don’t have flaky sea salt, any coarse salt will work, but flaky sea salt provides the best texture.
