Ingredients

4 boneless chicken breasts

2 tablespoons olive oil

8 oz (225g) mushrooms, sliced

1 lb (450g) baby potatoes, halved

1 cup chicken broth

1/2 cup dry white wine (optional)

1/4 cup soy sauce

1 tablespoon Worcestershire sauce

2 tablespoons honey

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)


Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken until browned, about 5 minutes per side. Remove the chicken from the skillet and set it aside.

  8. Serve the dish garnished with fresh parsley.
